Ingredients:
3 medium potatoes, peeled and halved
1 Indian green chilli, chopped
1 teaspoon of garlic/ginger paste
¼ teaspoon of turmeric powder
1 teaspoon of kashmiri chilli powder
½ teaspoon of cumin seeds
¼ teaspoon of salt
½ teaspoon of chaat masala
2 tablespoons of fresh mint, chopped
2 tablespoons of fresh coriander, chopped
2 tablespoons of cornflower
Oil for frying
Method:
- Par boil the potatoes in a saucepan of boiling water. Then drain the water and leave to cool. Once cool, grate the potatoes.
- Add the Indian green chilli, garlic/ginger paste, turmeric powder, kashmiri chilli powder, cumin seeds, chaat masala, salt, mint, and the coriander to the potatoes.
- Add the cornflour and mix well to form a soft dough.
- Put a little oil on your hands to stop the mixture sticking and prepare golf ball-sized balls.
- Press each of the balls out to form patties and shallow fry in hot oil for 2 to 3 minutes each side, or alternatively deep fry at 180 degrees C for 3 to 4 minutes, or until golden brown.
- Finally, garnish with fresh coriander. Enjoy aloo tikki with onion and coriander salad, mango chutney, or tamarind chutney and natural yoghurt.
