Lamb Madras is a flavourful and aromatic dish that originates from South Indian cuisine, particularly associated with the city of Madras, now known as Chennai. This dish features tender pieces of lamb that are marinated in a blend of spices named as a mixed powder which includes coriander, cumin, and turmeric, which are then slow-cooked to perfection. The use of base gravy balances the heat from the spices, while fresh herbs like coriander are used to garnish the dish, enhancing its vibrant presentation.
The preparation of Lamb Madras typically involves a meticulous process that begins with pre-cooking the lamb in spices for over an hour. This results in very tender lamb resulting in a rich and robust flavour profile.
Once marinated and cooked, the lamb is sautéed with garlic, mixed powder, base tomato, chilli powder and base gravy etc, creating a fragrant base that complements the medium to hot heat of the spices.
