You will find that base tomato is used extensively throughout main courses and side dishes that are cooked in Indian restaurant and takeaway cooking. It is generally added near the start of the cooking process and adds a fantastic taste to the resulting dish.
You can purchase tomato puree, passata, tinned tomatoes etc, but non of these will provide the actual results required. The majority of Indian restaurants and takeaways have their own slight variations on base tomato but the majority use double concentrate tomato paste as the basis of their recipe.
Our recipe provided in our “favourites book” is used in many outlets and of course contains double concentrate tomato paste, water, vegetable oil and an additional four ingredients. This produces the depth of flavour required and forms the taste that is often missing from the main course recipes.
